Work Shift:

6A-6P, Work 3-4 days per week, every other weekend required

Rotation: Week 1 = Mon, Tues, Fri, Sat

Week 2 = Sun, Wed, Thurs    


Primary Purpose:

Brine employees are responsible for handling the cheese through the brining process



  • Remove cheese from rings and input into Brine tank, ensuring it is properly placed, stacked and organized
  • Weigh, turn and salt the cheese throughout the Brine cycle
  • Perform tests/checks (temperature, Ph, etc.) and document results
  • Remove cheese from Brine Tank; place on racking or in totes
  • Complete paperwork, data entry and documentation
  • Complete sanitations tasks utilizing food grade chemicals, hoses and manual scrubbing
  • Understand and follow Good Manufacturing Practices (GMP’s), Standard Sanitation Operating Procedures (SSOP’s), PPE and other safety related requirements
  • Complete other duties as assigned

Work Environment/Physical Requirements:

Brine area is 50 degrees and involves work suspended over a 4’ tank of brine water.  Work is highly physical.  Must be able to bend, twist, kneel, crawl and squat.  Must be able to lift 25-30 lbs on a continuous basis and up to 50lbs on occasion.  Must be able to stand for a full 12 hour shift.
